Quick Recipe: Water Kefir

You've received your kefir grains! Here is the recipe to start making your gut friendly drink:

Kefir Recipe:
2 tablespoon Cane Sugar
1 tablespoon Coconut Sugar
1 Pinch Sea Salt, no iodine
2 Slices Lemon
2 Pieces Dried Fruit, unsulphured (apricot, prune, fig and etc)
1 Litre Water
1. Boil 1 cup of water
2. Add cane sugar, coconut sugar and sea salt to a 1-litre glass jar.
3. Add hot water to the sugar mixture and dilute.
4. Once sugars diluted, add cold tap water to ¾ of the jar.
5. Add lemon slices and dried fruit.
6. Add water kefir grains.
7. Top up with water.
8. Cover jar with cloth and secure with rubber band to avoid fruit flies.
9. Let stand on countertop for 2-6 days depending on the temperature. If warm outside the fermentation will be quicker and if cold, it will take longer.
10. The kefir grains will metabolize the sugar mixture, the longer you leave it out to ferment the tangier it will become.
11. Once the fermentation is to your taste, strain grains, throw away lemon slices and dried fruit, and pour liquid into a new glass jar. It is ready to enjoy as is or you can carry on with a second fermentation by adding a flavour.
12. Adding a flavour: Put ½ cup of sliced or crushed fresh fruits (strawberries, raspberries, orange, apricots, apple, etc) into the new jar and let it ferment for another 24-hr on the countertop.
13. Once the second fermentation is complete, store in fridge.
14. Restart the process of steps 1 to 13 with the grains put aside.
If you do not use the grains immediately to make another batch, you can store the grains in the refrigerator by storing them in a small glass container with 1 tablespoon of kefir water and 1 tablespoon of cane sugar.
